When I think of fall, and am not complaining about how much I dislike it, I’m thinking about apple crisp.
When I was growing up, we all called apple crisp “peanut butter pudding” either because it’s a British term from my dad’s side of the family, or because he made it up. He also used to refer to pepper a “papier” (sorry dad, that’s paper in French) and conditioner as “creme rinse” so I wouldn’t always trust his names for things.
This fall I’ve been enjoying apples, but don’t always want to make a big batch of apple crisp – mostly because I don’t want to eat an entire pan in one sitting, which is easy to do.
Enter my 3-minute apple crisp. All you need is a microwave and 3 minutes of your time!
- 1 apple
- cinnamon (to taste)
- 1 tbsp nut butter
- 1 tbsp granola
- Cocowhip (optional)
- Peel (optional) the apple. Core and slice into 1/8s. Cut each 1/8 in half.
- Place apple in microwaveable dish and sprinkle with cinnamon (I like lots).
- Cook for 60 seconds.
- Add nut butter and granola and cook again for 30-60 seconds.
- Top with Cocowhip and enjoy!

Per usual, a smoothie.
I’m currently following my tropical smoothie recipe and it’s making the dark mornings a little brighter.
Pretzels. I found them in my office and crunchy and salty just felt right.
Because when a burrito calls, you answer.
I also found a box of Trader Joe’s pumpkin bar mix and it’s a really good thing I only purchased one box because holy moly that stuff is good!
How does Butternut Squash Gnocchi sound?
