Throughout 2015 I’ll be making every mac & cheese recipe from the Buzzfeed article 21 Mac & Cheeses That Are Better Than A Boyfriend. The plan is to make one dish every other week, so that should take me the majority of the year to make and eat them. I’ll report back with the ease of making the recipe, the taste and whether or not it truly is better than a boyfriend.

I can’t believe I went a month without a recipe for you guys. I’m so sorry. I planned for this to go up last week, but I actually needed to cook for that to happen, and, well, that didn’t happen. Whoops.
This week is actually the 22nd recipe, since it wasn’t included in the Buzzfeed list, but as soon as I saw Cassie had posted this, I knew it would be on it. And really, what better than a slightly spicy mac and cheese to warm me up in Calgary?!
Recipe #3 is Bacon and Sriracha Mac and Cheese from Back to Her Roots.
First, coconut milk in mac and cheese. I think I dig it? Well, that was my thought before I actually made it.

Alrighty, let’s breakdown the recipe.
I went to Costco on Sunday (holy Hannah the lines. I’ve never seen lines so long in my life, and I thought going right when it opened would help. Ha!) so I ended up with the world’s biggest package of bacon, but I’m sure I’ll be able to deal.
Thankfully the measurement in ounces equated to the can sizes for the coconut milk and evaporated milk (I really just assumed). As for the cheese? I really just cut of a hunk and grated because I can’t be bothered to actually measure 🙂
For anyone who was on the fence about the coconut milk, you seriously can’t taste it. Seriously. I promise. It definitely made it creamy, and maybe added a bit of sweetness to it? But is certainly didn’t taste like it was trying to be tropical.
And now, since it’s Wednesday, let’s move on to what I ate aside from mac and cheese (which I took for lunch because I don’t waste food).
Before leaving the house I had a cup of coffee and an orange, then I headed to see my doctor.
On my way from the doctor’s to my office I realized I left my lunch bag in the exam room. So back to the doctors I went (taking 15 minutes each way!) and decided I was buying an almond milk latte and a scone instead of my chia pudding.
Sometimes I eat my feelings.
Lunch was the amazing mac and cheese followed up with a banana.
Please note the appropriate yellow to green ratio on the banana and the lack of spots.
I added a few of these to my SPUD shopping cart this week and tossed one in my lunch bag thinking it would be a good snack.
It……kind of tasted like puke? I don’t know, but I didn’t like it.
My initial plan was red curry with steak, but since I promised the Internet I’d go to yoga, and I didn’t want to use “cooking” as an excuse, I went with a salad and salmon instead since I knew I’d have it cooked and eaten long before my 7:45 class.
Okay Internet, I need you to hold me accountable to actually GO to yoga. Tomorrow. 7:45. Make me. Please.

For reference, the boyfriend scale:
1 – boyfriend wins hands down, this dish was insulting
2 – boyfriend, definitely, dish was lacking
3 – boyfriend definitely has more “zing” than the pasta
4 – pretty close, but boyfriend edges out the pasta
5 – neutral, not better, not worse, either or would work in this scenario
6 – listens to my problems, doesn’t interrupt, but is probably also thinking about sports
7 – listens to my problems and isn’t thinking about sports
8 – listens to my problems, while cuddling, might rub feet if asked
9 – listens to my problems, cuddles and rubs my feet
10 – listens to my problems, rubs my feet, and lets me watch chick flicks without complaining
Ease to make: Not any more difficult than any other recipe I’ve made.
Taste: Excellent! If you’re looking for more heat, you could definitely up the Sriracha in the recipe
Better than a boyfriend: Pretty freaking close, I’m rating this one at an 8!
